2/23/2006 Fried Chicken: Recipe

1 gallon cold water
1 c. kosher salt
1 c. sugar
4 to 5 pounds chicken
1 c. all-purpose flour
¾ c. buttermilk
½ t. cayenne pepper
Oil for deep frying

  1. Combine water, salt, and sugar in a large bowl
  2. Add chicken
  3. Cover and refrigerate overnight (30 minutes will be okay if you don't have time to do it overnight)
  4. Drain and pat dry
  5. Combine flour, buttermilk, and pepper in a mixing bowl
  6. Coat each piece of chicken
  7. Deep fry in oil at 355 degrees for 8 minutes or until juices run clear.
