Fried Chicken: Recipe
1 gallon cold water
1 c. kosher salt
1 c. sugar
4 to 5 pounds chicken
1 c. all-purpose flour
¾ c. buttermilk
½ t. cayenne pepper
Oil for deep frying
- Combine water, salt, and sugar in a large bowl
- Add chicken
- Cover and refrigerate overnight (30 minutes will be okay if you don't have time to do it overnight)
- Drain and pat dry
- Combine flour, buttermilk, and pepper in a mixing bowl
- Coat each piece of chicken
- Deep fry in oil at 355 degrees for 8 minutes or until juices run clear.
