Mashed Potato Casserole
2 pounds peeled potatoes
8 ounces pkg. cream cheese
1 cup sour cream
1 teaspoon salt
1/8 teaspoon pepper
4 tablespoons butter
1 egg
¼ cup chopped chives (optional)
- Cook potatoes in boiling, salted water until tender
- Drain
- Mash potatoes in large bowl with electric mixer.
- Add cream cheese, sour cream, salt, pepper, butter, and egg
- Beat at high speed until smooth and light
- Stir in chives (optional)
- Bake at 350 degrees for 30 minutes or until golden
