2/23/2006 Mashed Potato Casserole

2 pounds peeled potatoes
8 ounces pkg. cream cheese
1 cup sour cream
1 teaspoon salt
1/8 teaspoon pepper
4 tablespoons butter
1 egg
¼ cup chopped chives (optional)

  1. Cook potatoes in boiling, salted water until tender
  2. Drain
  3. Mash potatoes in large bowl with electric mixer.
  4. Add cream cheese, sour cream, salt, pepper, butter, and egg
  5. Beat at high speed until smooth and light
  6. Stir in chives (optional)
  7. Bake at 350 degrees for 30 minutes or until golden
